The first and twenty sixth birthday!

After a few hectic weeks E and her uncle Adam’s birthday party is over.  All in all it was a success.  I ended up making 10lbs of potato salad, artichoke dip, a fruit bouquet, a bumble bee cake and some chocolate cheesecake rounds.  Thankfully I was able to get everything completed in time.

I did, however, have a casualty.  When making the bumble bee cake I inserted the wings too early so they broke off the cake.  However, I just laid the down on the cake and it still looked very good.

It was a lot of work but E only turns one once and Uncle Adam is leaving for Toronto to go back to school—who knows when he will come back either!

Although I don’t have any pictures of the potato salad, it was definitely a hit. Same with the artichoke dip so I will just have to post the recipes.

The potato salad recipe comes from the really great eatery in Vancouver called Memphis Blues. They have probably some of the best pulled pork and brisket I have ever had. If you are in Vancouver you must go there and I challenge you to finish the Elvis Platter or better yet the Pricilla Platter. Check out their website at http://www.memphisbluesbbq.com

Classic Potato Salad

4 eggs

5 lb (2.2 kg) potatoes, cut into 3.4-in (2cm) dice

2 green onions, chopped

2 stalks of celery, diced

1 cup mayonnaise

¼ cup yellow mustard

1 Tbsp Lawry’s Seasoned Salt

1 Tbsp ground black pepper

¼ tsp celery salt

Hard boil the eggs in boiling water for 12 minutes, then cool, peel and coarsely chop. Add the potatoes to a large stockpot filled with boiling, salted water. Cook for 25 minutes of until tender. Drain well and refrigerate. When the potatoes are completely cooled, combine the remaining ingredients in a large mixing bowl. Add the cooled potatoes and hard boiled eggs and combine. Taste and adjust seasonings if required before transferring to an airtight container. Store in the refrigerator for up to 4 days or freeze.

Anyway, it is getting late and I am getting tired. Happy Birthday once again my little sweet pea E and Uncle Adam.
